VANILLA CHIA SEED PUDDING

SUPERFOOD: CHIA SEED PUDDING

Vanilla Chia Seed pudding is now one of my favorite healthy snacks. Did you know that chia seeds are considered a "superfood" because it delivers the maximum amount of nutrients with minimal calories. These seeds are packed with minerals, vitamins and antioxidants that protect your body from free radicals and fight aging. Most importantly, chia seeds are the best plant-based source of omega-3 fatty acids. Omega-3s help build new cells, reduce inflammation, regulate physiological functions, and prevent heart disease and diabetes. They also reduce depression levels, and promote healthy skin, hair and nails!  At first I was hesitant to try incorporating Chia seeds into my diet. I knew it was important to start eating them because of their wonderful health benefit but I just had no clue how to cook them. Below is a recipe that I tried and absolutely love! 

Ingredients:
1 cup of almond milk (You can use coconut, soy, or non-fat milk)
1/4 cup of chia seeds
1 teaspoon of vanilla extract
1 tablespoon organic maple syrup or honey

Toppings (optional): fresh fruit, unsweetened coconut flakes or nuts 


Directions:

1. In a small bowl or Tupperware with lid, combine all the ingredients. Mix well and refrigerate. During the first 30 mins, stir the mixture every 10 mins as it thickens. Cover and refrigerate for at least 3 hours or overnight.

2. Serve when the mixture reaches a custard-like consistency. Top with suggested toppings or eat plain.
